Warm days in the vineyard provide our Chardonnay with full ripeness. At night, cool breezes from the nearby Delta and San Francisco bay help maintain high acidity levels which make this Chardonnay very food friendly. 100% Chardonnay, these grapes are hand picked during the early morning hours to preserve freshness, hand sorted, gently destemmed and pressed at the winery. We ferment 100% of the juice sur lie and age in a combination of neutral french oak barrels for nine months. The juice is separated into two barrels, with two separate yeasts, then blended at bottling.
This Chardonnay has rich golden-straw-color with hints of green apple, melon, bartlett pear, graham cracker and backed with a creamy lemon drop candy finish. Barrel fermentation and aging resulted in a nice weight, roundness and toasty finish. We have experienced excellent pairings with rich creamy sauces, pastas, pizza, poultry, seafood in lemon butter sauce and light flavored cheeses such as mild cheddar, gruyere or provolone.
